Happy Monday, friends! How was your weekend?? Cody and I had spent ours mostly working on house stuff. We also happened to find a little bit of time to have a much needed date night that (joyfully) involved delicious, unhealthy, carb-loaded pasta! It seems like every Monday I’m on here telling you about how I ate all the eats over the weekend and am now back to detoxing and blah blah blah…but….real life, y’all. 😉

So here we are! Back to the Jar Of Lemons way of eating. And thank goodness, because these Spicy Southwest Whole30 Stuffed Peppers are heavenly!

These Spicy Southwest Whole30 Stuffed Peppers are great to take on-the-go!

If you follow my Insta stories, you may have seen that the day I made these we had several appointments with contractors at the new house and were going to have ZERO time for dinner. I ended up making these in advance, refrigerating them, and then taking them over to the house to devour while the contractors did their measurements and made their plans. I did freak out when I couldn’t figure out how to use our new gas oven (I’ve always had electric!) to heat them up, but other than that these Spicy Southwest Whole30 Stuffed Peppers turned out to be a GREAT dinner on-the-go!

Here’s what you’ll need to make these Spicy Southwest Whole30 Stuffed Peppers:

Sweet peppers, of course! The only other things you’ll need are ground turkey, spinach, pine nuts, spices (listed below), and a casserole dish. They’re SO easy to make, y’all!

Make these Spicy Southwest Whole30 Stuffed Peppers in 30 minutes!


  • 1/2 lb ground turkey
  • 1 cup spinach
  • 1/2 tsp ground pepper
  • 1/4 tsp cayenne
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1 tsp garlic
  • 1/2 tsp cumin
  • 5 whole peppers
  • 1 Tbsp crushed pine nuts


  1. Preheat oven to 425 degrees.

  2. Cook the ground turkey.

  3. While the ground turkey is cooking, cut the peppers in halves and clean out the middle of each one.

  4. Set one pepper aside and finely chop.

  5. When the turkey is almost finished cooking, add in the spinach and finely chopped pepper.

  6. Add in the ground pepper, cayenne, paprika, chili powder, garlic, and cumin.

  7. Stuff each pepper half with the turkey mixture and top with pine nuts.

  8. Bake for 20 minutes (or until peppers are nearly soft).

  9. Serve hot and enjoy!
